Is it possible to assign a task to multiple people and track the progress of each resource on the task? Suppose the task needs involvement of two separate resources - what is the best practice in this case?

On your task you can assign multiple resources. Simply go in the tab assignment of your task and click on add assignment. There you will have the possibility to add also a work estimation.

To track the task progress you can monitor the work recorded by the users with the operator load, you can monitor the number of closed issues form the general tab of the task and so on.

Simply create two assignments. Each resource will have a separate worklog track.
